  • 1½ cups warm water
  • 2 tsp instant yeast
  • 2 tsp fine sea salt

  • 8 oz pepperoni slices (the little curling cup kind)
  • 1 tsp dried oregano
  • 1 tsp garlic powder

Method

  1. Mix the dough. Combine flour, yeast, and salt in a large bowl. Add water and olive oil, mix with a wooden spoon until shaggy, then knead on a lightly floured counter for about 8 minutes — you want a smooth, elastic ball that springs back when poked.

  4. Stretch it out. Press the dough into the pan, stretching it to all four corners. If it springs back, let it rest 10 minutes and try again. Dough should cover the whole pan with a slight rim.
  5. Top it. Spread sauce in a thin layer, leaving a half-inch border. Scatter the mozzarella evenly. Distribute pepperoni slices across the top — don’t overlap them, give each slice room to crisp.
  6. Bake hot. 475°F oven, lowest rack, 16 to 20 minutes. You want the cheese bubbling with brown spots, the crust deeply golden, and the pepperoni curled up and crispy at the edges — little grease cups on top, that’s the sign.
