The Best Pizza Stone Might Be a Slab of Steel. Or a Heavy Stone. Here’s How to Tell.

Three test kitchens crowned three different winners. So I ran the numbers on the spec sheets instead, and the answer turned out to be simpler than the arguments.

Shopping for the best pizza stone feels like asking three friends for a restaurant recommendation and getting four answers. One test kitchen says buy steel. Another says cast iron. A grilling site says cordierite, and steel only belongs on a charcoal grill.

They can’t all be right about your oven. So I went through the published test results, pulled the weights and dimensions of every model, and ran the heat math myself. No, I didn’t bake on ten slabs — this is a buyer’s guide built on other people’s measurements and some basic physics, and I’ll show my work.

Three Test Kitchens, Three Different Winners

Start with the people who actually bake on these things. America’s Test Kitchen put steels at the top of its rankings, above every stone it tried. Its testers found steel-baked crusts slightly more tender and airy, and stone-baked crusts a touch drier and chewier.

Food Network’s shopping team bought 10 models, baked the same cheese pizza at about 525°F, and named a Lodge cast iron pizza pan best overall, with the Original Baking Steel a close second.

Then there’s Vindulge, a respected grilling blog, which calls cordierite the clear winner and says its authors only reach for steel on a grill. That’s nearly the opposite of the ATK verdict.

Here’s the thing, though. They’re mostly not contradicting each other. They’re cooking in different places, for different pizzas, and weighting different things. Once you know what each material is actually good at, the three verdicts line up neatly.

The “18 Times More Heat” Claim, Checked

You’ll see one number repeated everywhere in this debate. In a 2016 guest post, the inventor of the Baking Steel, Andris Lagsdin, wrote that steel stores more than 18 times the heat that stone can. Our own stone vs. steel breakdown uses 18x too, but as a conductivity figure — which, spoiler, is the version that holds up.

I wanted to see whether that holds up.

Stored heat is just weight times specific heat — how much energy a pound of material holds per degree. Engineering ToolBox lists steel at 0.12 BTU per pound per °F. A US patent on ceramic filter substrates (No. 7,574,796) puts cordierite, the stuff most pizza stones are made of, at about 750 J/kg·K, which works out to roughly 0.18.

So pound for pound, cordierite actually holds more heat than steel. Steel just packs more pounds into a thin slab. Plug in the real weights and sizes ATK published and you get this:

Look at the second row. A thick cordierite stone banks about 22% more heat per square foot than the ¼-inch steel most people picture when they hear “baking steel.” The 18x number doesn’t describe storage at all.

What it gets close to is conductivity — how fast heat moves through the material. Thermtest puts carbon steel at about 45 W/m·K, while that same patent lists cordierite at 1.3 to 1.8. That’s a 25x to 35x gap. Same ballpark as the famous number, just describing a different property.

What Actually Decides Your Crust

Split the question in two and the whole debate gets easier. A slab does two jobs: it banks heat during the preheat, and it delivers heat into the dough once the pizza lands.

Material decides delivery speed

Steel dumps its heat into the dough fast. ATK actually measured this: after an hour of preheating, every model read 500°F, but the steels’ surface temperatures dropped faster once dough went on. Their read was that the steels were giving heat away quicker, and that’s why their crusts rose higher and browned sooner.

Stone delivers more gently. That’s not a defect. Vindulge’s complaint about steel on the grill is that it heats fast and swings in temperature, and my read is that gentler delivery is simply more forgiving over a live fire.

Weight decides preheat time and recovery

More mass means more heat to bank, which takes longer to load and lasts longer between pizzas. ATK’s lightweight Outset tiles hit 500°F in 30 minutes, while everything else needed the full hour. At the other end, the 27-pound Baking Steel Pro and the inch-thick California Pizza Stones slab both bounced back faster between pies.

That’s also why a thin, light steel can feel underwhelming on pizza number three. It delivers fast but doesn’t have much in the bank. If you’re feeding a crowd, weight matters more than material.

These picks come from published test results plus the heat math above. Where I cite performance, it’s the tester’s finding, not mine. Specs are as ATK and Food Network reported them, and prices move constantly, so treat any number as a snapshot.

The Original Baking Steel

This is the only model both ATK and Food Network ranked near the top: ATK made it a co-winner, and Food Network named it the best steel. ATK described pizzas that came out crisp and browned outside and tender inside, and the slab itself is essentially indestructible.

Honey-Can-Do 14 x 16-Inch Cordierite Stone

If you want a classic stone, this is the one ATK recommended. It turned out a nicely browned crust with bubbly cheese, and at 8.2 pounds it’s far easier to wrangle than any steel. The crust ran a shade drier and chewier than steel-baked pies, which is the stone trade in a nutshell.

Baking Steel Pro (or a thick stone like the Solido)

Hosting pizza night for eight? You want the biggest heat bank you can lift. The Pro banks the most heat per square foot of anything in the table, and ATK found it needed less time to recover between pizzas. It’s also 27 pounds, which makes it less a kitchen tool and more a gym membership.

The cheaper route is a 1-inch-plus stone. The Solido banks more heat per square foot than a standard steel at less than half the weight of the Pro. Four 7½-inch cordierite tiles you push together on the rack. Each weighs under 1½ pounds, they preheated in half the time of everything else in ATK’s lineup, and two tiles fit in most toaster ovens. ATK found the crust just a shade chewier than steel. For about $28, that’s a great deal and an easy lift for anyone who can’t hoist 16 pounds.

Lodge Cast Iron Pizza Pan

Food Network’s overall winner. Their tester got streaks of char on the bottom, a good rise, and a pan that stayed hot after it came out of the oven. It costs around $40 and doubles as a cast iron pizza workhorse. The catch is size: at 14 inches round, it caps your pie smaller than a rectangular slab would.

Already shopping King Arthur? The King Arthur Bread and Pizza Stone is a rectangular cordierite stone rated to 1,400°F, so it’s grill-safe too, and it lists at $68.95. It carries a 4.8-star average across 173 reviews. I couldn’t find weight or thickness published, or an independent test, so I can’t place it in the heat table — but it’s the right shape and material.

Match the Slab to Your Pizza

Here’s the whole guide in one move: pick the delivery speed your pizza needs, then pick enough weight for the number of pies you bake.

  • Thin crust, New York-style or Neapolitan-ish in a home oven: steel. You need fast delivery to set the bottom before the top dries out. Our New York-style pizza at home recipe was built for exactly this setup.
  • Bread, calzones and thicker crusts: stone, or steel one rack lower. Gentler delivery stops the base from burning before the middle bakes through.

Size matters as much as material. King Arthur’s own guide recommends rectangular over round and as big as your oven fits, because a bigger target makes the launch forgiving. I’ll second that; a pie that lands half on, half off is how smoke detectors earn their keep.

How to Get the Most Out of It

Between pies, give it at least five minutes to recover, per King Arthur. Skip that and every pizza comes out paler than the last. Some bakers run two slabs on two racks and alternate.

If a steel browns your bottom before the cheese melts, ATK’s fix is to switch to broil as soon as the pizza goes in. If that’s still lopsided, drop the steel a rack and set the oven to 450°F. That’s the classic cause behind a pizza that’s burnt on the bottom and pale on top.

Leave it in

ATK suggests storing a slab on an oven rack, where it steadies the oven temperature. Take it out for cookies and cakes.

Never the oven floor

Many ovens vent through the floor, and ATK warns those vents must not be blocked. Use a rack.

Keep stones dry

Moisture trapped in a porous stone expands when heated and can crack it. Let a wet stone air-dry fully first.

Oil a wet steel

Treat steel like cast iron: hot water, no soap, dry it right away and wipe on a thin film of oil.

Is a pizza steel worth it over a stone?

For thin, fast-baked pizza in a home oven, the test results say yes. ATK ranked every steel above every stone. If you mostly bake bread, thicker crusts or grill your pizza, a good cordierite stone costs less, weighs half as much and suits the job better.

How long should I preheat a pizza stone or steel?

Plan on an hour at 500°F; both ATK and King Arthur landed there. Food Network found its stones ready at around 30 minutes, and ATK’s lightweight tiles were ready in 30 too. Thicker and heavier slabs need the full hour.

Why did my pizza stone crack?

The usual culprits are moisture and impact. ATK notes that stones can crack if they’re heated while wet or dropped. Let a washed stone dry completely before it goes back in the oven.

Do I need a stone at all?

The best pizza stone for most home ovens is a quarter-inch steel, and the Original Baking Steel is the safest single pick. But the reason isn’t that steel “stores 18 times more heat.” It doesn’t. It’s that steel hands its heat over fast, and fast is what a 500°F oven needs to fake a pizzeria floor.

If you bake bread, grill your pizza, or can’t lift 16 pounds comfortably, a thick cordierite stone is a smart, cheaper buy — and heavier is better. Either way, preheat for an hour and give it five minutes between pies. Honestly, that habit will do more for your crust than any brand name.
